The One Thing I Can Bake..... A Blueberry Pie

Y’all, I found ONE thing I can bake! I am not a baker so when I made this blueberry pie, ( more like blueberry crumble pie??) it was well received so I decided to keep making it. I even have one guy back home who begs me to make it whenever I come back to visit.

Ingredients:

FOR PIE FILLING

1 - 9” deep-dish pie crust, unbaked (I just use a store bought one from Pillsbury in the store’s freezer section)

4 cups frozen or fresh blueberries

1 cup + 1/2 tbsp. sugar

1/4 cup cornstarch

1/4 cup cold water

1 pinch salt

1/8 tsp. cinnamon

2 tsp vanilla extract

3 tbs. butter

1 cup more blueberries



FOR CRUMB TOP

5 tbsp. cold butter, cut into small pieces

1/2 tsp. vanilla extract

1/4 cup sugar

3/4 cup flour

1/2 tsp more sugar to sprinkle on top



Directions:

FOR PIE FILLING

In large saucepan, bring 4 cups frozen or fresh blueberries and 1 cup + 1 tbsp. sugar to a boil over medium - high heat.

Stir and fold mixture gently until sugar has dissolved and there is juice. Whisk cornstarch and cold water until blended. Pour into berry mixture. Gently stir until clear and thickened. Remove from heat, add the rest of pie ingredients. Mix until butter has melted completely. Cool and chill. Spoon pie filling into your unbaked, deep-dish pie crust.

FOR CRUMB TOPPING

Pre-heat oven to 375 degrees Fahrenheit. Place cut up butter into medium sized mixing bowl. Add the vanilla extract, sugar, and flour.

Cut in butter until crumbs have formed. The easiest way to do this is with your fingers. Don’t play with it too much or your butter will start to melt. Sprinkle crumb mixture over pie filling. Sprinkle the remainder of the sugar over top of pie. Put pie in oven and bake for 40 minutes or until it just starts to bubble and crust is golden brown. Cool on counter.

I always put my pie on a baking sheet while its in the oven because mine ALWAYS over flows……oops.

Also don’t worry if you have to scoop it out with a spoon. It’s more of a blueberry crumble instead of a “pie”, as you can see from my picture above. I think this would be Dean Winchester approved!

This “pie” is best served warm with vanilla bean ice cream. Blue Bunny is my favorite!
